Tallow-Fried Chicken Dinner

Cadillac Service Garage | 304 E Market Street | Greensboro

Food thoughtfully prepared. A meal with great people. Nourishing.

Course 1

Chilled Pumpkin & Melon Gazpacho

In honor of Clyde Keisler, Andrea’s Grandfather, here comes a pumpkin soup like you’ve never had before. Known as the Pumpkin Man of Cary, Clyde would approve of this chilled starter to a dinner built around the strength of local farmers! We will build the layered flavors of pumpkin, melon and squash together with bright peppers, cucumbers and onions into a kind of autumn sipping tonic.

Course 2

October Fields Salad

Just a small taste from the fields of the farm. Fresh greens from Sunset Market - a great family enterprise between Greensboro and Reidsville. These special greens are carefully tended and loved in hoop houses and harvested just in time to make it onto your plate with toasted pumpkin seeds, microgreens and local mushrooms from Sprinkles Mushrooms - a local business in High Point.

Extra Virgin First Pressed Olive Oils from our friends at the Olive Press, mixed with their imported Balsalmic Vinegar to create our very own Time Machine dressing that will fill your body with antioxidants, not seed oils!

Course 3

Fried Chicken

Raised right on the farm, Crossings whole birds range from slightly less than three pounds all the way to 6 pounds for the large family.  Raised on fresh grass and wholesome grains, this local Lexington Farm is the perfect place to support!

We will fry these chickens in Summerfield Farms Organic Beef Tallow. They will be breaded in glyphosate-free organic flour, Crossings eggs and the best spices we can source.

October Veggies

We’re not quite sure what our vegetable will be until we head to the local farmer’s market. But we expect to find veggies like carrots, sweet potatoes, turnips, pumpkin, dark leafy greens like collards or Mustard Greens. We will update it as soon as we know, but just like Auntie Fern’s kitchen, you’re gonna be happy… just wait!

Course 4

Rhubarb Pie

Oh man! This Grandpa Jung’s recipe but Ahma & Andrea perfected it. It is a custard base made with Plymouth Farms eggs and local rhubarb sourced from the farmer’s market. All good butter and great flour in this crust. Jay just might have milled the flour himself!

The only thing that could be better?… maybe a scoop of out-of-this world ice cream made with three simple ingredients… raw milk from local Jersey cows, honey from Plymouth Farms, and vanilla.

I personally apologize for the vagueness of the dress code on the first Time Machine Supper Club event. I way underestimated the importance of over-communicating when it came to creating the possibility of a fashion faux paus. Even with my oversight, however, I believe that all in attendance were dressed oh so appropriately!

So if you attended in July, we are keeping it the same. But to be clear, the dress code for the evening is called Business Casual.

I looked it up.
